In this mountainous Andean region, smallholder producers cultivate Arabica varieties—Bourbon, Castillo, Caturra, Colombia, and Typica—under Rainforest Alliance (RFA) certification and with meticulous fully washed processing. Huila’s volcanic soils, shade trees, and year-round harvests give the coffees a signature profile: crisp notes of green apple, smooth caramel sweetness, and deep undertones of dark chocolate.
Huila is one of Colombia’s most celebrated coffee regions. Over 35 of its 37 municipalities grow coffee, often on farms averaging just 1.5 hectares, where growers focus on quality over volume. Varietals like Castillo—bred to resist leaf rust—and traditional lines such as Bourbon and Typica are common. Producers work with sun and shade, combining old-world tradition with modern logistics, and many operate their own wet mills to ensure clean, consistent washed processing.
In recent years, cooperatives, producer groups, and innovative farmers have elevated quality through variety trials, new fermentation methods, and improved traceability. While much of the country’s output historically fed commodity markets, Huila has emerged as a leader in specialty coffee, producing lots with distinctive flavour clarity and growing international recognition.
